Jacob's Creek Double Barrel Cabernet Sauvignon is sourced from Coonawarra, one of Australia's most famous Cabernet regions. It is best known for its terra rossa soil.
The fruit is destemmed and fermented on skins with cultured yeast. As it ferments, pump overs and occasional punch downs help extract colour and tannins from the skins.
After pressing, the wine is first matured in French and American oak barrels for 12-18 months, then finished in aged Irish whiskey barrels. The narrower staves allow more oxygen, which softens and rounds the tannin profile.
Crimson purple, Jacob's Creek Double Barrel Cabernet Sauvignon has rich, ripe dark fruits, subtle toasty oak and smooth tannins. Cellaring potential is 10 years.
